Fermented probiotic rich drink to support a healthy gut!
What Is Kvass?
Kvass is a probiotic fermented drink that may benefit your gut. As a gut health focused nutritionist I love to make my own fermented drinks. I used a wild fermentation method for my berry kvass this means I don't inoculate my drink with a starter culture. Instead the ferment happens organically with the natural yeast and bacteria that are present on the fruits and in the environment.
Where Do The Probiotics Come From?
The truth is we are surrounded with bacteria and yeasts. When we provide the ideal conditions for healthy probiotics to multiply they thrive. This is also true for a healthy digestive system. The bacteria are on our skin, in the soil, on the berries. As the berry kvass ferments, it goes through different stages of attracting beneficial bacteria and yeasts.
What I Love About Berry Kvass?
Fermented berry kvass is a delicious refreshing drink. It is the right time of the year to pick the berries as they are plentiful in June and July. Turning seasonal berries into a fermented drink as kvass captures their aroma, flavour and colour. If you bottle it when done and let it ferment at room temperature for a day or two you build up a lovely fizz too.
Children love this probiotic drink and if they prefer it more sweet you can always add a little honey or a drop of stevia to sweeten it.
INGREDIENTS:
1kg mixed summer berries such as strawberries, raspberries, blackcurrants, redcurrants
1/2 cup of unrefined sugar or less
1.5-2Ltr filtered water
METHOD:
Wash and Hull the berries
Put in a large glass vessel about 3 ltr capacity
Add water and sugar, stir vigorously
Cover mouth with a muslin and secure with a tie
Stir the drink vigorously 3-4 times a day
When it bubbles and looks active after 3-4 days strain into a bottle and let it carbonate for 1-2 days at room temperature
Check by burping the bottle that is has developed a fizz and to release the pressure
Once sufficient fizz has been achieved put in fridge
Drink while still young to enjoy the captured aroma of the fresh berries.
