POTATO MASALA

What is Potato Masala?

Potato masala is an Indian side dish made with diced potatoes and spices. You can eat it on its own or use it to accompany other curries. You can also use it to stuff a dosa ( fermented pancakes) to produce Dosa Masala!


Spicy, fragrant and savoury you will sweat as you eat it but not so much that you

can't savour each mouthful!


It is flavoured with great spices that are anti-inflammatories such as ginger and turmeric. It also contains a great amount of garlic that is great for circulation and chilli too. If you eat it on a cold day you are sure to warm up soon!

Ingredients for Potato Masala

1 Tsp Brown mustard seeds

1/2 tsp Cumin seeds

1-2 dry red pepper

1 Medium Red onion diced

1/2 tsp salt

1/2 tsp Turmeric powder

A small pinch of Asafoetida

1 Tbls grated fresh ginger

6-8 Curry leaves

4 large garlic cloves minced

2 Small green chillis chopped

Fresh coriander, large handful

1 Kg Red potatoes or other potatoes. Large dice boiled cooled.

1 Tablespoon rice bran oil or ghee.

Method for Making Potato Masala

Heat about 1 tablespoon heat resistant oil or ghee in a pan. add the mustard seeds, cumin seeds and dry chilli. Cook for about 20-30m seconds or till the seeds start to pop. Then add in the ginger, onion, turmeric, garlic give it a good stir and season add in rest of the ingredients. Add a little water it sticking, season with salt and pepper then add in the potatoes and about 1/2 a cup of water. Simmer on medium to low heat for 20-30 minutes add in the freshly chopped coriander at the end. Serve immediately or save and enjoy at room temperature.
