GRILLED AND FERMENTED SPRING ONIONS
Fermented foods and drinks have well established benefits to us. Making a variety of Fermented foods and drinks a regular part of your diet is a great way to invest in your health.
Here is a recipe off the beaten track hope you give it a try and enjoy it.
INGREDIENTS:
1 Bunch of Spring onions
A few big sprigs of flat leaf parsley
1-2 dry red chilli
1/4-1/2 tsp whole black peppercorns
3-4 fresh bayleaves
3-4 Garlic cloves slit in half
40 gr Sea salt
1Ltr filtered water
METHOD
Trim scrag ends of spring onions and wash well. You can keep the root ends on.
Mix the salt with water and let it dissolve.
Heat a cast iron grill and grill the onions on both sides to give them a charred flavour.
Put the grilled onions in a clean glass jar along with herbs and spices. Pour over the 4% brine. Put the parsley stalks on top of the onions to help keep them submerged in the brine.
Cover the jar with it's lid and sit on a plate or in a tub.
Once fermentation gets on the way it may spill over and onto the counter.
Depending on the temperature let it ferment anything from 2 weeks - 2 months.
I tasted mine at 2 months and they were delicious as the onions absorbed all the flavours of the spices and herbs.
