SPICED PUMPKIN LATTE

Pumpkin Spiced Latte

If you have some roast pumpkin pulp left over in the fridge this is a great warming drink to make during the autumn months. It is packed with nutrients, warming spices and some cheeky sweetness!

1 cup or 250 ml coconut milk

1/2 tsp ground mixed spice or a mixture of cinnamon, ginger, cloves, allspice and nutmeg.

2 tsp coconut sugar or rapadura sugar. Or you can use any other sweetener of your choice.

2 heaped tbsp cooked pumpkin pulp

Ingredients For Pumpkin Spiced Latte

Put all ingredients in to a steel pan and bring to the boil stirring. Simmer for a minute or two.

Next depending on how smooth you like your drink put the contents into the blender and blend to make it silky and smooth!

Pour into a cup or mug and sprinkle the top with more spice. Enjoy while it is still warm.
