EASY FETA CHEESE PASTIES

FETA CHEESE PASTY

A delicious pasty made with a light pastry incorporating, yoghurt and baking soda. Filled with feta cheese and fresh parsley. An ideal snack for children and easy to make.


Other fillings can be ham & cheese, mushrooms cooked with shallots, cheese and onion, sardines with boiled eggs, braised chard, olives and herbs.








250 gr plain flour

65 gr butter, pliable not cold and stiff

1/2 cup plain yoghurt

1/3 cup milk

1 level teaspoon sea salt

2 level teaspoon Baking Soda

1 whole egg


FOR THE FILLING:

150 gr feta cheese

A handfull of flat leaf parsley

About 1 whole egg white


Glaze:

Yolk of the egg from the mix

Little milk or water

Nigela seeds

Sessame seeds



Work the butter into the yoghurt with a knife in a bowl. When it is broken into small pieces add in an egg and the milk mix with a for to combine.


Add in the flour, baking soda and salt and mix gently with the fork or knife to combine. Try turning it on itself till it all comes together in a ball. Scrape the sides of the bowl and put the mix on the table. Work gently without putting pressure on the dough to gently kneeding it into a smooth ball. Put back into a the bowl and cover while preparing the filling.


Drain the feta cheese from the brine and break it into pieces with a knife and than work it with a for to make it into crumbs. Chop the parsley and add it to the cheese. Add about almost all of the egg white to the mix and reserve the rest of the egg for the egg wash for later. Mix to combine.


To fill the pasties take a ball of pastry the size of an egg and gently flatten it on the palm of your hand with a little sprinkling of flour to stop it from sticking. Work lightly and press down to get a circle about 1/4 inch thick. Put some cheese along the middle than fold over the sides of the circle towards the top. Than press them together and crimp them to seal. If you feel they don't stick use a little of the egg wash to wet the sides to help it stick. Turn the seal on it's side and turn the pasty over and place on a baking tray lined with greaseproof paper. It should look like a pasty or a boat shape crimp along the top and than make the rest of the pasty. You should be able to make 9 with the mix.


When they are all done brush with the egg wash and sprinkle with the seeds. Bake in a pre heated oven at 180C gas mark 6 for 20 minutes.


Cool on a wire rack.
